Picanha is the rump cap, a cut with a generous layer of fat. This coarse seasoning brings salt, herbs and vegetables to the cook, without a sugary glaze.

Rock salt texture Large, pale crystals with small flecks of seasoning. A coarse blend, rather than a fine powder.

A great cut.
Three simple steps.

Start with rump cap, a hot grill and a little patience. Here is the starting point for your first cook.

  1. Season the cut. Start with 5 g per 500 g of meat. Season all sides and press the crystals in. No extra salt underneath.
  2. Give it 15 minutes. Leave the seasoning on the meat before cooking over direct high heat. Keep an eye on the fat cap over the coals.
  3. Rest. Slice. Share. Rest the cooked meat for 10 minutes, then slice against the grain. Add chimichurri at the table if you like.
